More than half a plate of vegetables

You know about MyPlate, right? It’s the UDSA’s replacement food pyramid that illustrates how, for optimum nutrition, fully half of our plates should consist of fruits and vegetables.

Kid One has it dialed in – he stuffs salad-type things into a soft tortilla and calls it lunch. Today’s delectable and colorful feast: a large spinach tortilla spread with garlicky hummus then filled with shredded carrots, pea shoots, mushrooms, chopped black olives, and chopped cashews. Wrapping it tightly is all in the wrist.

It’s pretty, hmm? Tasty, too.
