Balsamic zucchini "chips" with garlic and almonds

  • 2 medium-sized zucchini
  • 1 green onion
  • ¼ tsp minced garlic
  • 1 tbsp olive oil
  • 3 tbsp coarsely chopped almonds
  • 2 tsp balsamic vinegar
  • Salt and pepper
  1. Thinly slice zucchini and green onion.
  2. Heat oil in a skillet medium-high
  3. Add garlic and onion and cook for a minute, stirring constantly.
  4. Add zucchini slices and almonds and cook for another 2 minutes, stirring often and gently.
  5. Salt and pepper to taste and arrange on a plate.
  6. Drizzle with balsamic vinegar and enjoy!
